Ingredients for a single serving:

  • 1 serving of Monte Monaco pea Penne Pasta
  • 2 tablespoons natural cashews (unsalted, unroasted)
  • 3 walnuts
  • 2 tablespoons pitted black olives
  • 1 slice of pear (half if Williams or a third if Abate)
  • Garlic and onion powder (if desired)
  • Salt, pepper.


Cook the cashews in boiling water for 15 minutes.

Blend them with a drop of pasta cooking water to make them creamier, add salt, pepper, garlic and onion powder.

Crack the walnuts and chop them. Cut the olives into slices. Cut the pear into cubes.

Mix everything together and season the cooked and drained pasta. Serve.
