Ingredients for a single serving:
- 1 serving of Monte Monaco fava bean Laccetti Pasta
- 1 handful of breadcrumbs (preferably wholemeal)
- Some parsley leaves
- Lemon juice and zest
- 6 pitted black olives
- 4 capers
- Onion and garlic powder (if desired)
- Chilli pepper flakes
- Chives
Instructions:
Crumble the breadcrumbs, season with garlic and onion powder and toast in a pan. Set aside.
Cook the pasta.
Chop the parsley and add the grated lemon zest, a dash of lemon juice, the chilli pepper flakes, sliced olives, capers, garlic and onion powder. Combine drained pasta with breadcrumbs, stir and serve with a sprinkling of freshly ground black pepper and chives.
